Mini Chocolate Pies (Great for Valentines Day)

This may look very time consuming but it is super easy. My husband loves these pies and prefers them to the pies I make from scratch. These are so fun for parties or a special dinner with your significant other.

Crust:

Blend: 4 cups of flour, 1 1/2 cup shortening, 1 tsp salt with pastry cutter or fork until it forms pea size balls. In a separate bowl beat 1 egg, add 1 tsp. vinegar and 4-5 TBS water. Add to flour mixture. Mix together just until all incorporated. If you over mix the crust will not be light and fluffy! Divide into three balls. Roll out dough until 1/4 inch thick. With a large round cookie cutter cut circles that will fit into a muffin tin. Press lightly around the sides to form the crust. Take a fork and make indents around the outside to form the edge of the crust. Also prick a few holes in the crust for baking. Bake at 400 degrees until light golden brown. Cool on a rack.

Mouse:

In a medium size bowl combine 2, 3 oz. instant chocolate pudding mixes and 3 cups of cold milk. Stir until thick and let stand for 3 minutes. Mix in 1/4 cup sweetened condensed milk. Fold in 1 cup of whipped topping or sweetened whipped heavy cream. (Mix 1 pint of heavy cream with mixer until it forms soft peaks. Then add 1/3 cup powdered sugar and 1 tsp vanilla). Pour into the cooled shells. With a piping bag, pipe on more whipped cream. Top with a fun chocolate candy and shaved chocolate for some fun garnish!

Cinnamon Roasted Pecans

Ingredients:

1 pound almonds (about 3 1/2 cups)
1 egg white
1 teaspoon vanilla extract
1/2 cup brown sugar, packed
1/2 cup white sugar
1/2 teaspoon salt
1 teaspoon cinnamon

Supplies:
large cookie sheet with sides (or two 9x13 pans)
no-stick cooking spray (Pam), oil or shortening for greasing cookie sheet
medium and small mixing bowls
fork
wide spatula or mixing spoon

Also preheat your oven to 250 F.

1. Separate the egg white from the yolk and discard the yolk. In a medium mixing bowl, lightly beat the egg white with a fork until frothy. Add the vanilla and mix together. Add the almonds and stir well to make sure all the almonds are coated with the egg white/vanilla mixture.

2. In a small mixing bowl, combine the brown sugar, white sugar, salt and cinnamon until well mixed.

3. Sprinkle the cinnamon/sugar mixture over the almonds and stir well until all the almonds are evenly coated. Try to break up any large clumps of coating--or just leave them and enjoy them later after they're roasted.

4. Lightly grease your cookie sheet either by spraying with Pam or wiping with a paper towel dabbed with oil or shortening.

5. Spread the coated almonds evenly onto the greased sheet, and gently shake the pan back and forth a few times so they're in one layer. You may need to use two pans if your cookie sheet isn't big enough.

6. Place the pan in the preheated oven and roast for a total of one hour, stirring twice (at 20 minute intervals).

7. A wide spatula works well for stirring without knocking too much of the coating off. After each stirring, give the pan a gentle shake to even out the layer of almonds.After an hour of roasting, allow them to cool. Keep them stored in an airtight container.

8. Sprinkle them on a goodie plate, package them up in a pretty bag with a ribbon, serve them in a bowl for a party snack, or keep them for yourself as a quick, sugary treat!

Peppermint Bark

I love this stuff this time of year. It is one of the things that I am going to be giving out to friends and neighbors. The best thing about it is that it is so fast and easy. I hope you have as much fun trying it out as I did.

Ingredients

1 pound white chocolate

1 pound of white chocolate

12 candy canes

When I made this I used Peters dark chocolate and Ghirardelli white chocolate. You can use what ever you like the best. Just know that if you are using a non-tempered chocolate you will need to temper. If you use chocolate chips or a chocolate that is already tempered you will not have to temper. My dark chocolate had to be tempered and my white chocolate did not.

How to temper:

Chop your chocolate. It is best to use at least 1 pound of chocolate, as it is easier to temper (and retain the temper) of larger amounts of chocolate. If this is more than you need, you can always save the extra for later use. Be sure that your chocolate is in block or bar form, not chocolate chips. The chips have additives that allow them to retain their shape at higher temperatures, and so they will not temper properly.
Melt 2/3 of your chocolate. Place it in the top of a double boiler, set over simmering water. Securely clip a chocolate or instant-read thermometer to the side of the boiler to monitor the chocolate’s temperature.
Stir gently but steadily as the chocolate melts and heats up. Use a rubber spatula, not a wooden or metal spoon.
Bring the chocolate to 115 degrees (for dark chocolate) or 110 degrees (for milk or white chocolate). Do not allow the chocolate to exceed its recommended temperature. When it is at the right temperature, remove it from the heat, wipe the bottom of the bowl, and set it on a heat-proof surface.
Add the remaining chunks of chocolate and stir gently to incorporate. The warm chocolate will melt the chopped chocolate, and the newly added chocolate will bring down the temperature of the warm chocolate.
Cool the chocolate. Once the chocolate gets below 84 degrees, remove the remaining chunks of chocolate. They can be cooled, wrapped in plastic wrap, and saved for another use.
Reheat the chocolate briefly.Place the chocolate bowl over the warm water in the double boiler for 5-10 seconds, remove it and stir, and repeat, until the temperature reaches 88-89 degrees (87 for milk and white chocolate). Do not leave the chocolate over the hot water, or allow it to exceed 91 degrees.
Your chocolate should now be tempered! To make sure it has been done properly, do a spot test: spread a spoonful thinly over an area of waxed paper and allow it to cool. If the chocolate is shiny and smooth, it is properly tempered. If it is dull or streaky, it has not been tempered correctly.
Directions:
1. Line cookie sheet with tin foil and smooth as possible
2. Unwrap your candy canes and put in a food processor. Pulse a few times until the candy canes are in small pieces. Remove 1/2 cup for topping and set aside.
3. Melt or temper your white chocolate and mix in the candy canes. Pour the white chocolate onto your lined cookie sheet and with a spatula spread the chocolate to about 1/4 inch thick. Place in a cool area to harden.
4. Melt our temper your dark chocolate. Pour onto your hardened white chocolate and spread evenly. Sprinkle with the reserved candy cane and press slightly to make sure they stick to the chocolate once it is hardened. Place in a cool area to set. Once the chocolate is hard break into pieces. Serve on a plate or store in a air tight container.

Teacher Christmas Gifts

I know it is a little early for this but I started early due to a foot surgery that I am about to have. I found this idea HERE and absolutely loved it. So I decided to get my kids teachers Christmas gifts made ahead of time so that I did not have to worry about it after my surgery. The one on the blog is for teacher appreciation week but I geared mine more toward Christmas. This is another fun project that I got to use my cricket!!

Breakfast Quesadillas

I got a quesadilla maker for my birthday and it is one of my new favorite toys. I made these for breakfast the other day and now my husband wants them every morning! You do not need the quesadilla maker to do this but it does add a little special something. The best thing about these is that you can be creative and put whatever your little heart desires in your quesadilla.

First start out by scrambling 4 eggs and cook through.

This is what I added to my quesadilla.

Sliced Deli Ham

Monetary Jack Cheese

Green Onion

Red Bell Pepper

Pickled Jalapenos

On a flour tortilla add all your ingredients and half of the eggs, then topped with another flour tortilla. Lightly butter both outsides of the tortillas. Now here is my yummy secret. On your pan or quesadilla maker, sprinkle some cheese directly onto the pan. Afterwords you get a yummy fried cheese taste that sticks to the outside of the tortilla. Cook until nice and crispy and serve with salsa. So yummy!!

Chocolate Toffee Trifle

This is a super easy dessert that will have everyone impressed!! It is a chocolate lovers dream.

INGREDIENTS

1 box of instant chocolate pudding

Whipped Cream

1 box fudge brownie mix (prepare and cool ahead of time)

caramel sauce

toffee bits

Prepare the pudding as directed on the box. Mix in2 cups of whipped cream.

*Crumble up the brownies and put a layer on the bottom of your trifle dish

Drizzle caramel sauce all over the brownies

Layer on some whipped cream

Sprinkle toffee bits over whipped cream

Layer on pudding mixture

Repeat layers until you reach the top and then finish with whipped cream and toffee bits

Refrigerate

Penne Pasta with a Vodka Clam Sauce

I tried this recipe the other day when I was in a big hurry. Even thought I am a die hard (make it from scratch person) it was actually pretty good. This is now a go to recipe that will be in my book of fast meals. I hope you enjoy!

Ingredients

1 pound Penne Pasta

2 slices of day old white bread

2 TBS snipped fresh parsley

2 TBS butter

2 cans minced clams, undrained

2 1/2 cups jarred vodka marinara sauce

3 garlic cloves, minced

1 lemon

slices of fresh Parmesan cheese

Directions

1. Bring salted water to a boil in 4-qt.Casserole. Cook pasta according to package directions.

Drain using large Colander; set aside.

2. As pasta cooks, prepare topping. Chop bread into small pieces. Snip Parsley.
Place butter into Saute Pan; melt over medium heat. Add bread crumbs;

stir for 2-3 minutes or until bread crumbs are crisp and golden. Remove pan

from heat. cool slightly. Stir in parsley.

3. In a saucepan strain clam juice. Add vodka sauce and pressed

garlic. Juice lemon to measure 1 tbsp juice; stir into sauce. Bring to a
simmer over medium heat. Remove from heat and stir in pasta and clams; cover
and let stand 3-5 minutes or until heated through.

4. To serve, divide pasta among serving plates; sprinkle with bread crumb mixture
and top with thin slices of Parmesan cheese.

Japanese Beef Bowl

Ingredients:

2 Green Onions

1 pound chuck steak

3 garlic cloves, minced

6 TBS soy sauce

2 TBS sesame oil

1 tsp ground pepper

1 TBS sugar

2 tsp vegetable oil

1 cup uncooked jasmine rice

2 medium carrots

2 cups bean sprouts

1 TBS sesame seeds

Directions:

For the marinade, slice the green onions including the tops and reserve about 2 TBS for garnish. In a bowl place the remaining green onions.

Cut the steak against the grain into thin strips and place in the bowl with the green onions. Place the minced garlic in the bowl. Add the soy sauce, sesame seed oil, pepper and sugar. Mix well, cover and refrigerate. (I prefer marinading over night. You do not have to do this but the longer it marinades the better the taste)!

Once you are ready to cook the beef, prepare the rice according to the package. As the rice is cooking do the following:

Peel the carrots and discard the skins. Continue peeling the carrots to make long ribbons. Set aside. Rinse and clean the bean sprouts and set aside.

For the steak, add one TBS of vegetable oil to a skillet over medium heat. Add the beef to the skillet and cook undisturbed for 3 minutes. Stir and cook beef another 1-3 minutes or until the beef is no longer pink. Remove from heat.

In another skillet, add 1 TBS vegetable oil over medium heat and quickly stir fry the carrots and bean sprouts for 2-3 minutes.

To assemble put 2/3 cup of cooked rice in a bowl. Top with the cooked beef and vegetables. Garnish with green onions and sesame seeds.

Poor Man Enchiladas

These enchiladas are a spin off of my husband grandmother's recipe. I do it this way when I am really short on time. You can change it up to fit your families likes but this is how we like it around here!

Ingredients

1 pound lean ground beef

salt and pepper to taste

15 corn tortillas

1-2 cups vegetable oil (for frying)

1 cup grated cheddar cheese. 1/2 head of lettuce, shredded

3 Roma tomatoes, diced

1 large can of your favorite red enchilada sauce

1 can of refried beans

sour cream

salsa

Place the ground beef in a skillet over medium heat. Sprinkle with salt and pepper. Crumble meat and cook until brown. Set aside

Heat up the refried beans in a pot over medium heat on the stove.

Heat up enchilada sauce over medium heat in a pot over the stove.

In a medium skillet heat the oil. It only needs to be one inch thick with oil. The oil will bubble and expand when you cook the tortillas and you do not want it to over flow and cause a grease fire. Heat the oil until it is hot. Place on tortilla at a time in the oil and cook for 30 seconds on each side. Remove from pan and place on paper towel. Repeat until all of the tortillas are fried.

To assemble dip the tortillas into the enchilada sauce. I like to stack three tortillas on top of each other. Top with the beans, meat, cheese, lettuce, tomatoes, sour cream and salsa.

Voila!

Orange Rolls

We love orange rolls around our house. They are our special birthday breakfast treats or my family gets them when mom is really in the mood for a sweet and gooey breakfast! I really like this recipe and think that you will love it too. Happy baking.

Ingredients

1 package (1/4 ounce) active dry yeast
1/4 cup warm water
1 cup warm milk
1/4 cup shortening
1/4 cup sugar
1 teaspoon salt
1 egg, lightly beaten
3-1/2 to 3-3/4 cups all-purpose flour
FILLING:
1 cup sugar
1/2 cup butter, softened
2 tablespoons grated orange peel
GLAZE:
1 cup confectioners' sugar
4 teaspoons butter, softened
4 to 5 teaspoons milk
1/2 teaspoon lemon extract

Cool Lime Napoleons

Some of you may know that I love Pampered Chef and secretly sale it on the side to support my addiction. This is a recipe that I love to turn to when we are entertaining or when I am looking for something easy and refreshing. I hope you like them as much as I do!

1 package (8 ounces) refrigerated crescent rolls

3 kiwi, peeled and sliced

1 can (11 ounces) mandarin orange segments, drained and patted dry

2 large limes

1 container (8 ounces) frozen whipped topping, thawed

1/2 cup powdered sugar

1/4 cup sliced almonds, finely chopped

1. Preheat oven to 375ºF. Lightly sprinkle sheet pan with flour. Unroll crescent dough across length of pan; pinch seams to seal. Lightly sprinkle dough with flour. Roll dough evenly. The dough will not cover the entire pan. Prick dough with a fork or pastry tool. Bake 12-15 minutes or until light golden brown. Remove from oven; cool 10 minutes on cooling rack.. Carefully remove pastry from pan to cooling rack; cool completely.

2. Transfer pastry to cutting board. Using Pizza Cutter, cut pastry crosswise into six rows and lengthwise into four rows to make twenty-four 2 1/2-inch squares. Slice kiwi. Place one kiwi slice and one orange segment onto each pastry square.

3. Zest one lime to measure 1 teaspoon zest. Finely snip zest using Kitchen Shears. Juice limes to measure 2 tablespoons juice. In a bowl, combine whipped topping, powdered sugar, lime zest and juice; mix until smooth and slightly thickened. In a piping bag with a star tip completely fill with lime mixture. Pipe a 1 1/2-inch rosette onto center of each pastry square, refilling decorator as needed.

4. Finely chop almonds and sprinkle over rosettes. Lightly sprinkle with powdered sugar. Place one pastry square on top of another, pressing down lightly. Repeat with remaining pastry squares. Serve immediately.

Yield: 12 servings

Nutrients per serving (1 Napoleon): Calories 190, Total Fat 9 g, Saturated Fat 4 g, Cholesterol 0 mg, Carbohydrate 22 g, Protein 2 g, Sodium 150 mg, Fiber less than 1 g

Cook’s Tips: The pastry squares can be served as 24 single dessert canapés, if desired.
